Winemaking Details

Varietal Composition: Predominantly Monastrell (Mourvedre) and Cabernet Sauvignon.
Vineyards: Sourced from 12 hectares of Cabernet Sauvignon and 32 hectares of very old Monastrell vines, yielding low quantities of high-quality fruit.
Harvest: Grapes are handpicked into small baskets to prevent bruising, with meticulous selection at triage tables.
Fermentation: Conducted in stainless steel tanks to preserve varietal character.
Aging: Aged for 24 months in new French and American oak barrels, imparting complexity and structure.
Alcohol Content: Approximately 16% ABV.
